Apricot, Blueberry & Molasses Verjus

Water, fruit and molasses have been fermented for 6 months achieving a little alcoholic proof (2.5%). Expect dry notes to your final cocktail.

This ingredient matches really well with any dark spirits.

Ontario Peaches & Blackberry Honey Home-brewed Kombucha

Based on black tea we ferment the liquid with our very own S.C.O.B.Y then cut it and infuse it with local sourced peaches.

Lacto-Fermented Foam

Using some of otherwise wasted ingredients such as strawberry leaves, peach pits and watermelon rinds we lacto-fermented the fruit at 2% salt and then add to honey-water base liquid before adding gelatin (fish bones based) and egg whites to create a different layer.
